Hunter’s Cajun Boy Grilled Salmon and Scallops

Ingredients
  

  • 1 slab Salmon
  • 10 Large scallops
  • 2 tablespoons Cajun Boy Original Seasoning
  • 2 tablespoons Olive oil
  • 1 Lemon
  • 1 Fresh parsley
  • Salt and black pepper to taste

Notes

Instructions:
1. Prepare the Cajun Boy Marinade:
  • In a small bowl, combine the Cajun Boy Seasoning, olive oil, and garlic pepper. Mix well and add to taste.
2. Prep the Salmon and Scallops:
  • Pat the salmon and scallops dry with paper towels.
  • Place the salmon slab on a large plate or tray, skin side down.
  • Evenly spread half of the Cajun Boy marinade over the salmon, ensuring it covers the entire surface. Let it marinate for about 15 minutes at room temperature.
3. Prepare the Grill:
  • Preheat your grill to medium-high heat (around 400-450°F or 200-230°C). Ensure the grill grates are clean and lightly oiled to prevent sticking.
4. Season and Skewer the Scallops:
  • Season the scallops with a pinch of salt and black pepper.
  • Thread the seasoned scallops onto skewers, about 2-3 scallops per skewer. This makes them easier to handle on the grill.
  • Sprinkle with Cajun Boy Original Seasoning.
5. Grill the Salmon and Scallops:
  • Place the salmon slab directly on the grill grates, skin side down. Close the grill lid and cook for about 4-5 minutes.
  • Carefully flip the salmon using a wide spatula, then spread the remaining Cajun Boy marinade over the top of the salmon.
  • Place the scallop skewers on the grill alongside the salmon.
  • Continue grilling the salmon for another 4-5 minutes or until it flakes easily with a fork.
  • Grill the scallops for about 2-3 minutes per side or until they turn opaque and develop grill marks.
6. Serve:
  • Carefully remove the salmon and scallops from the grill.
  • Transfer the salmon to a serving platter and gently slide a spatula between the salmon flesh and skin to remove it if desired.
  • Garnish the dish with lemon wedges and fresh parsley.
  • Serve your grilled Cajun Boy salmon and scallops hot, with your favorite side dishes like rice, vegetables, or a fresh salad.
